Lemon Tilapia

If you like lemon, you are going to love this sauce, and probably find other uses for it as well.

Ingredients:

  • 1 tilapia fillet – skinless

  • 2 shallots – finely chopped

  • 4 garlic cloves – finely chopped

  • 1/3 cup Moscato

  • ¼ cup Extra virgin olive oil (we like the mild flavor of Olivares De Barahonda)

  • ½ Tbs grated lemon zest

  • 1 Tbs lemon juice

  • 1 lemon – sliced

  • Sprig fresh rosemary - finely chopped

  • Sprig fresh thyme - finely chopped

  • Sprig fresh oregano - finely chopped

  • Old Bay Lemon & Herb seasoning

  • Old Bay Blackened seasoning

  • Pinch rock salt

  • Pinch black pepper

  • Olive oil - for frying

  • Pat of butter

Directions:

  1. Season tilapia with lemon pepper and blackening seasoning on both sides.

  2. Sautee on stovetop for 2 min on each side, or until internal temperature reaches 145F, then remove and let rest.

  3. To start sauce, sautee shallots and garlic in butter in a tall quart pan.

  4. Turn heat off, then add EVOO, white wine, lemon juice, lemon zest, salt, pepper, and herbs.

  5. Cover tilapia with lemon sauce and garnish with lemon slices.
