Saturday Swedish Pancakes
The fun thing about these is that they are not as heavy as a dutch baby, are slightly firmer than a crepe, although still light.
Ingredients:
1/3 cup all-purpose flour – sifted
3 Tbs unsalted butter – melted
½ cup whole milk
1 Tbs sour cream
1 egg
1 drop vanilla extract
1 Tbs sugar
½ nutmeg – freshly shaved
½ cinnamon stick – freshly shaved
Pinch of salt
Directions:
Whisk together all wet ingredients (including melted butter) with chopsticks (to aerate and make them even lighter)
Add in flour
Fry in a 3-egg pan on the stovetop: makes 6 mini pancakes
