Preserved Citrus

If you want to take your recipes that include citrus up to the next level, throw this together in your free time and let it do its thing…

Ingredients:

  • 1 orange

  • 1 lemon

  • 1 lime

  • 1 tsp coriander seeds

  • ½ tsp fennel seeds

  • 2 branches sage

  • 1.5 dried Chili Anchos

  • 2.5 Tbs Morton coarse kosher salt

  • 3.5 Tbs sugar

  • Quart sized freezer Ziploc bag

Directions:

  1. Cut off ends from the fruit, then cut into wedges

  2. Add all ingredients into a Ziploc bag

  3. Store at room temperature for 3 weeks, turning bag every other day.
