Healthy Fried Chicken

We have made this low-carb fried chicken recipe for many years using ground Parmesan instead of bread crumbs, but found this great tip by Samin Nosrat to fry your chicken in Ghee in order to get a richness that takes your flavor up a notch. Ingredients:

1 chicken breast – skinless/boneless

1 egg

Parmesan – freshly shaved

Ghee (we like Organic Valley)

Directions:

  • Heat stovetop to medium (#5) and melt Ghee.
  • Rinse chicken breast and pat dry.
  • Crack egg into a bowl and whisk briefly.
  • Cover chicken breast in egg then cover with shaved Parmesan.
  • Pan fry for 4 min on each side or until internal temperature reaches 165F.
