Yellowtail Snapper
I never thought I could cook gourmet fish until I tried Alton's Brown's yellowtail snapper recipe, and my mind was blown! If you are craving a five-star meal, you can do this...
Ingredients:
2 cups rock salt
2 egg whites
1 lemon – cut into 6 slices
1 yellowtail snapper – filleted in half
1 Tbsp parsley paste
Himalayan rock salt – freshly ground
Peppercorns – freshly ground
Directions:
Mix 2 cups rock salt with 2 egg whites and a splash of water.
Put half of it on a cooking sheet lined with aluminum foil and lay 3 slices of lemon on it.
Lay fish on top of the rock salt and lemon slices.
Put 3 slices of lemon, parsley, and salt/pepper in between the fish halves.
Cover fish with the rest of the rock salt.
Bake at 350 degrees for 20 min, or until internal fish temp is 145 degrees.
Let it rest for 10 min.
Then, remove the salt and enjoy some of the best fish ever!
