Pompano Fish

Pompano is a local Florida fish that you must get if you have the opportunity! It has a white, firm, flaky texture with a sweet taste that goes well with grilling or sauteeing. And if you love lime, it pairs so well with this fish... Ingredients:

1 Pompano fillet – filleted/skinned

Sprig of dill

Juice of ½ lime

Wedges of ½ lime

Olive oil

Pat of butter

Rock salt

Fleur de Sel salt

Black pepper - freshly ground

Directions:

  • Wash fillet and pat dry with paper towels.
  • Sprinkle rock salt and pepper on both sides of the fish, then lay a sprig of dill on the bottom of the fillet.
  • Place olive oil in a sautee pan, heat to medium (#6), then place fish in pan with dill side down when oil just starts to bubble.
  • Cook on medium heat for 3 min until edges turn white.
  • Add pat of butter to pan and flip fish, then cook for 2 min longer or until internal temp reaches 145F.
  • Let rest for 5-10 min.
  • Season with a pinch of Fleur de Sel salt and lime juice.
  • Garnish with lime wedges.
