Poached Eggs with Easy Hollandaise Sauce

Hollandaise sauce is one of those things that you think only a real chef can achieve. But this is an easy version that if you can use a hand immersion blender, you too can do. And it tastes so good!

Poached Egg Ingredients:

  • 1 egg

  • Butter

  • Splash of vinegar

  • Pinch of salt

Hollandaise Sauce Ingredients:

  • 1 egg yolk

  • ½ tsp lemon juice

  • ½ tsp water

  • Pinch of salt

  • ½ stick butter

Poached Egg Directions:

  • Use a paper towel to butter the slotted spoon poacher

  • Crack an egg into a paper bowl

  • Place enough water in a pot to cover the line on the poacher

  • Add a splash of vinegar and a pinch of salt to the water and boil on high

  • Then reduce to a simmer (#5)

  • Slip the egg into the poacher for 4 min

  • Remove the poacher and place the egg into water with ice cubes to stop the cooking

Hollandaise Sauce Directions:

  • Blend everything but the butter in a hand blender cup

  • Melt ½ stick butter on the stove

  • Slowly blend melted butter into the blender cup over 30 sec

  • Pour over the poached egg and eat like a real chef!
