Fast Smoked Artichoke
Before this recipe, I avoided cooking artichokes like no tomorrow. But this is so easy that you if you have a pressure smoker you will want to try it.
Ingredients:
1 artichoke
Small applewood chips
Equipment:
Pressure cooker such as Instapot or Emson smoker
Directions:
Cut top, stem, and top of each leaf off the artichoke with sterilized scissors.
Place 1 cup of water in bottom of pressure cooker and small applewood chips in the chip tray.
Close lid securely and cook on Hot Smoke for 12 minutes.
Slowly release pressure, let cool, then pull each petal off and dip into your desired dip (we like melted butter with garlic paste).
