Creamy Tomato Soup
This is the greatest creamy tomato soup for when you are craving quick comfort food. Make it when you have a few free minutes and store it in a Mason jar if you happen to have any left (not likely).
Ingredients:
12 small ripe tomatoes - sliced in half
1 small yellow onion - peeled and sliced thin
2 garlic cloves - finely diced
16 oz chicken stock
1/4 cup cooking sherry
1/2 cup heavy cream
Cashews - roasted/salted (optional - for garnish)
Fresh thai basil (optional - for garnish)
2 Tbs Butter
2 Tbs Olive oil
Sprinkle of sugar, salt, and pepper
Directions:
Oven roast tomatoes on Hi Broil until just starting to blacken after drizzling with olive oil and sprinkling with sugar, salt, and pepper.
Saute onions, garlic, and warm tomatoes in butter on stovetop.
Blend roasted tomatoes with sauteed garlic and onions in the blender briefly then return to stovetop pan.
Add chicken stock and sherry and cook on stovetop (#4) at light boil for 10 min.
Add heavy cream and cook for 10 min more or until taste reaches the ultimate.
Garnish with fresh basil and roasted cashews.
