Saturday Swedish Pancakes

The fun thing about these is that they are not as heavy as a dutch baby, are slightly firmer than a crepe, although still light.

Ingredients:

  • 1/3 cup all-purpose flour – sifted

  • 3 Tbs unsalted butter – melted

  • ½ cup whole milk

  • 1 Tbs sour cream

  • 1 egg

  • 1 drop vanilla extract

  • 1 Tbs sugar

  • ½ nutmeg – freshly shaved

  • ½ cinnamon stick – freshly shaved

  • Pinch of salt

Directions:

  1. Whisk together all wet ingredients (including melted butter) with chopsticks (to aerate and make them even lighter)

  2. Add in flour

  3. Fry in a 3-egg pan on the stovetop: makes 6 mini pancakes
