Tall Lil’ Omelettes

Ingredients:

  • 50 g heavy cream

  • 4 eggs

  • 2 g salt

  • Toppings:

    • Arizona Style: cherry tomatoes, basil, roasted pine nuts (sautee in coconut oil w/ salt), olive oil drizzle

    • Arkansas Style: smoked gouda cheese, bacon

    • California Style: Avocados and feta cheese

    • Georgia Style: crispy shallots

    • Louisiana Style: baby sweet bell peppers, Vidalia onions

Directions:

  1. Heat sous vide to 185F.

  2. Use a paper towel to butter the inside of 4 x 4 oz Mason jars.

  3. Blend eggs, heavy cream and salt with an immersion blender.

  4. Place egg mixture in Mason jars and sous vide for 25 minutes.

  5. Keep in refrigerator until breakfast.
