Eggs in Tomato Sauce “Shakshuka”

I love this for breakfast when I am craving Italian, but want to stay low-carb. Plus, the eggs add a little protein. How delicious it ends up being depends all on the sauce, though. I get a homemade one from the local Farmer’s Market. Just make sure to choose a tomato sauce that you love.

Ingredients:

  • 1 cup tomato sauce

  • 3 quail eggs

  • Gouda cheese – shredded

  • Olive oil

  • Pinch of salt

  • Pinch of pepper

 

Directions:

  1. Place your favorite tomato sauce into an individual ramekin.

  2. Crack 3 quail eggs and place in sauce (using a quail egg cracker makes it easy).

  3. Cover with shredded cheese.

  4. Add pinch of salt and pepper, then drizzle lightly with olive oil.

  5. Bake for 10 min at 350F.
