Book Review: “Modernist Cuisine at Home”

We love this set of 2 books by Nathan Myhrvold and Maxime Bilet for many reasons:

  • If you want to buy new cookware, this will tell you which are the best and why.
  • It’s expensive; but, this is the ultimate “home chef school” reference book. You are guaranteed to learn something new every time you open it (like to freeze your steak so that you can sear the outside then slowly cook the inside at a low temperature).
  • It has an included extra smaller ring-bound Kitchen Manual that you can refer to directions when cooking (rather than the giant manual).
